This contemporary recipe is bright and refined, with an epicurean blend of imported whole Italian plum tomatoes and domestic diced tomatoes for a robust, restaurant-style texture.
Calcium chloride is a naturally occurring salt, sometimes referred to as pickling salt, that helps vegetables maintain their natural firmness. It is used in many natural products including tofu, artisanal pickles and bottled water. The diced tomatoes Victoria uses in its sauces contain small amounts of calcium chloride to aid in maintaining a hearty tomato texture.
