Shrimp and Spinach Alla Vodka with Bowtie Pasta Recipe

Ingredients

  • 1 pound extra large shrimp, peeled and deveined
  • 2 cloves garlic, chopped
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 1 jar (24 oz.) Victoria® Low Sodium Vodka Sauce
  • 1 package (5 oz.) baby spinach
  • 8 ounces bow tie pasta, cooked according to package directions
  • Parmesan cheese for serving

Directions

  1. Toss shrimp with garlic and let stand 5 minutes.
  2. Heat olive oil over medium heat in large nonstick skillet. Add onion and cook 5 minutes or until tender. Add shrimp and garlic and cook 3 minutes. Add Victoria Low Sodium Vodka Sauce and bring to a boil over high heat. Reduce heat and simmer 5 minutes or until shrimp turn pink.
  3. Stir in spinach and cook 2 minutes or just until spinach is wilted. Toss with cooked pasta. Serve with Parmesan cheese.
