Baked Feta in Spicy Marinara Recipe

Ingredients
- 1 tbsp oil
- 1 cup bell peppers, diced medium sized
- 1 large shallot, finely diced
- 4 cloves garlic, minced
- 1 tbsp crushed red pepper flakes
- 1.5 cup Victoria Marinara Sauce
- 8 oz. feta
- parsley to garnish
Directions
- Preheat oven to 400 degrees F.
- In a pan, warm up oil on medium heat. When hot,, add the bell peppers. Let them cook for about 1 minute and then add in your shallots.
- After another minute or so, add in the garlic and crushed red pepper flakes.
- Mix well and pour in your Victoria Marinara Sauce. Add salt/black pepper per taste.
- When the sauce is warm and cooked through, take it off the stove and pour into an oven safe baking dish.
- Add your block of feta right in the middle of the sauce. Bake in the oven for about 15-20 minutes, and then broil for 3-5 minutes. Check on it every minute or so when broiling. When it’s charred on the top, that’s when it’s done!
- Garnish with chopped parsley if desired, and serve with naan or sliced baguette!
