Rigatoni Alla Vodka with Burrata Recipe

Ingredients
- 2 tablespoons olive oil
- 1 large onion, sliced
- 1 package (3 oz.) julienne sundried tomatoes (1 cup)
- 1 jar (24 oz.) Victoria® Low Sodium Vodka Sauce
- ¼ to ½ teaspoon crushed red pepper (optional)
- 8 ounces rigatoni, cooked according to package directions
- 4 small burrata
- Fresh basil
Directions
- Heat olive oil and cook onion 10 minutes or until golden and tender. Add sundried tomatoes and cook 2 minutes. Add Victoria Low Sodium Vodka Sauce and crushed red pepper and simmer 5 minutes.
- Stir in cooked pasta until evenly coated. Arrange burrata over pasta. Cook 3 minutes or until heated through.
- To serve, drizzle with olive oil and top with crushed red pepper and basil leaves.
