Rigatoni Alla Vodka with Burrata Recipe

Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, sliced
  • 1 package (3 oz.) julienne sundried tomatoes (1 cup)
  • 1 jar (24 oz.) Victoria® Low Sodium Vodka Sauce
  • ¼ to ½ teaspoon crushed red pepper (optional)
  • 8 ounces rigatoni, cooked according to package directions
  • 4 small burrata
  • Fresh basil

Directions

  1. Heat olive oil and cook onion 10 minutes or until golden and tender. Add sundried tomatoes and cook 2 minutes. Add Victoria Low Sodium Vodka Sauce and crushed red pepper and simmer 5 minutes.
  2. Stir in cooked pasta until evenly coated. Arrange burrata over pasta. Cook 3 minutes or until heated through.
  3. To serve, drizzle with olive oil and top with crushed red pepper and basil leaves.
