Shakshuka Alla Vodka Recipe

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 1 red bell pepper chopped
  • 1 jar (24 oz.)  Victoria® Low Sodium Vodka Sauce
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • 3 cups baby spinach
  • 5 eggs
  • ¼ cup crumbled feta cheese
  • 2 tablespoons chopped fresh oregano

Directions

  1. Preheat oven to 375°F. Heat olive oil in large nonstick, ovenproof skillet over medium heat and cook onion and pepper 6 minutes or until tender, stirring occasionally.
  2. Add Victoria Low Sodium Vodka Sauce, cumin and paprika and simmer 5 minutes to blend flavors, stirring occasionally. Stir in spinach and cook 2 minutes or until spinach is wilted.
  3. Using a spoon, make 5 indentations or wells, in the tomato mixture (make sure the indentations are spaced out). Gently crack an egg into each indention.
  4. Bake 10 minutes or until eggs are desired doneness. Sprinkle with feta and oregano and serve, if desired, with crusty bread.
