Shakshuka Alla Vodka Recipe

Ingredients
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 1 red bell pepper chopped
- 1 jar (24 oz.) Victoria® Low Sodium Vodka Sauce
- 1 teaspoon ground cumin
- ½ teaspoon smoked paprika
- 3 cups baby spinach
- 5 eggs
- ¼ cup crumbled feta cheese
- 2 tablespoons chopped fresh oregano
Directions
- Preheat oven to 375°F. Heat olive oil in large nonstick, ovenproof skillet over medium heat and cook onion and pepper 6 minutes or until tender, stirring occasionally.
- Add Victoria Low Sodium Vodka Sauce, cumin and paprika and simmer 5 minutes to blend flavors, stirring occasionally. Stir in spinach and cook 2 minutes or until spinach is wilted.
- Using a spoon, make 5 indentations or wells, in the tomato mixture (make sure the indentations are spaced out). Gently crack an egg into each indention.
- Bake 10 minutes or until eggs are desired doneness. Sprinkle with feta and oregano and serve, if desired, with crusty bread.
