Turkey and Mushroom Bolognese Recipe

Ingredients
- 1 tablespoon olive oil
- 2 carrots, chopped (1 cup)
- 1 small onion, chopped (1 cup)
- 1 package (8 oz.) baby bella mushrooms, chopped
- 2 cloves garlic, chopped
- 1 pound ground turkey
- ½ cup white wine or chicken broth
- 1 jar (24 oz.) Victoria®️ Low Sodium Marinara Sauce
- 1 tablespoon chopped fresh thyme, plus additional for garnish
- 3 tablespoons heavy cream
- 8 ounces red lentil spaghetti, cooked according to package directions
Directions
- Heat olive oil in large nonstick skillet over medium high heat. Add onion and carrots, season with salt and pepper if desired, and cook 5 minutes or until vegetables are tender-crisp. Add mushrooms and garlic and cook 4 minutes or until mushrooms are tender.
- Add ground turkey and cook, breaking up turkey, until no longer pink, about 5 minutes. Add wine and simmer 1 minute.
- Add Victoria Low Sodium Marinara Sauce and thyme and simmer 15 minutes. Stir in heavy cream. Toss Bolognese with spaghetti and sprinkle with additional fresh thyme. Serve with grated parmesan cheese if desired.
