Vodka Sauce Marry Me Chicken Recipe

Ingredients

  • 1 lb spaghetti pasta
  • 2 boneless skinless chicken breasts, thinly sliced lengthwise
  • 2 tsp salt, plus more to taste
  • 1 tsp pepper, plus more to taste
  • ⅓ cup all-purpose flour
  • 2 tbsp olive oil
  • 24 oz Victoria Vodka Sauce
  • ⅓ cup sun-dried tomatoes, roughly chopped
  • ½ cup grated Parmesan
  • Chopped fresh basil, for garnish

Directions

  1. Cook the pasta in a large pot of salted boiling water over medium heat, according to package directions. Set aside.
  2. Pat the chicken dry with paper towels. Season with salt and pepper. Place the flour in a shallow bowl. Dredge the chicken in the flour, shaking off the excess.
  3. In a large skillet over medium-high heat, heat oil. Add the chicken and cook, about 4-5 minutes per side, until golden-brown, or until an internal temperature reaches 165°. Transfer the chicken to a plate and set aside.
  4. Add the Victoria Vodka Sauce to the same skillet and cook, scraping up brown bits from the bottom of the pan as needed. Add the sun-dried tomatoes and bring to a simmer over medium heat. Season with salt and pepper, to taste. Stir in the Parmesan until combined, about 1 minute.
  5. Return the chicken to the skillet and cook until the sauce thickens slightly, about 3-5 minutes. Top with the basil and serve with spaghetti.

Tips

Substitute 4 thinly sliced boneless skinless chicken breasts for the 2 whole boneless skinless chicken breasts!
