Vodka Sauce Marry Me Chicken Recipe

Ingredients
- 1 lb spaghetti pasta
- 2 boneless skinless chicken breasts, thinly sliced lengthwise
- 2 tsp salt, plus more to taste
- 1 tsp pepper, plus more to taste
- ⅓ cup all-purpose flour
- 2 tbsp olive oil
- 24 oz Victoria Vodka Sauce
- ⅓ cup sun-dried tomatoes, roughly chopped
- ½ cup grated Parmesan
- Chopped fresh basil, for garnish
Directions
- Cook the pasta in a large pot of salted boiling water over medium heat, according to package directions. Set aside.
- Pat the chicken dry with paper towels. Season with salt and pepper. Place the flour in a shallow bowl. Dredge the chicken in the flour, shaking off the excess.
- In a large skillet over medium-high heat, heat oil. Add the chicken and cook, about 4-5 minutes per side, until golden-brown, or until an internal temperature reaches 165°. Transfer the chicken to a plate and set aside.
- Add the Victoria Vodka Sauce to the same skillet and cook, scraping up brown bits from the bottom of the pan as needed. Add the sun-dried tomatoes and bring to a simmer over medium heat. Season with salt and pepper, to taste. Stir in the Parmesan until combined, about 1 minute.
- Return the chicken to the skillet and cook until the sauce thickens slightly, about 3-5 minutes. Top with the basil and serve with spaghetti.
Tips
Substitute 4 thinly sliced boneless skinless chicken breasts for the 2 whole boneless skinless chicken breasts!
