Season chicken generously with salt and pepper. Set pressure cooker to sauté and heat olive
oil. Brown chicken on both sides; remove chicken. Add wine and stir to scrape any browned
bits from bottom of cooker. Press cancel.
Add onion, pepper and mushrooms to pressure cooker; season with
salt if desired. Arrange chicken over vegetables. Pour
Victoria® Cacciatore Sauce over the chicken.
Lock pressure cooker lid in place, select High Pressure, and
cook 12 minutes. Release pressure
using quick release.
Remove chicken from sauce. Set cooker to sauté and bring sauce to a boil. Cook 5 minutes or until sauce reduces and
thickens slightly. Serve with pasta if desired.
